For The Crispy Noodles

4 cups parboiled hakka noodles
oil for deep-frying

For The Chopsuey Topping

1/2 cup sliced onions
1/2 cup capsicum strips
1/2 cup carrot jullienes
1/2 cup shredded cabbage
1/2 cup boiled noodles
1 1/2 tbsp cornflour
2 tbsp oil
1 cup tomato ketchup
2 tsp chilli sauce
2 tbsp vinegar
1 tbsp sugar
salt to taste


For the crispy noodles

Heat the oil in a deep non-stick kadhai, add 2 cups of hakka noodles and spread it evenly to form a layer and deep-fry till it turns crispy and golden brown in colour from both the sides. Drain on an absorbent paper.

Repeat step 1 to deep-fry the remaining noodles. Keep aside.

For the chopsuey topping

Combine the cornflour with 1½ cups of water in a deep bowl, mix well and keep aside.

Heat the oil in a deep non-stick pan, add the onions and sauté on a medium flame for 1 minute.

Add the capsicum, carrot and cabbage and sauté on a medium flame for 2 to 3 minutes.

Add the boiled hakka noodles and sauté on a medium flame for 1 minute.

Add the tomato ketchup and chilli sauce, mix well and cook on a medium flame for 1 minute, while stirring occasionally.

Add the cornflour-water mixture, vinegar, sugar and salt, mix well and cook on a medium flame for 3 to 4 minutes or till the sauce thickens, while stirring occasionally.

Divide it into 2 equal portions and keep aside.

Just before serving, place one portion of the crispy noodles on a serving dish and top it with one portion of the chopsuey evenly over it.

Repeat step 1 to make 1 more plate.

Serve immediately.

1 inch Ginger, chopped , अदरक
1 clove Garlic, chopped , लहसुन
1 medium Onion, sliced , प्याज
1 medium Capsicum, julienned , शिमला मिर्च
¼ medium Red bell pepper, julienned , रेड बेल पेपर
¼ medium Yellow bell pepper, julienned , यलो बेल पेपर
2-3 Baby corn, julienned , बेबी कॉर्न
1 medium Carrot, julienned , गाजर
¼ medium Cabbage, shredded , पत्ता गोभी
1 ½ tbsp Soya sauce , सोया सॉस
¼ cup Tomato ketchup, टाॅमेटो केचप
¼ cup Red chilli sauce , रेड चिली सॉस
½ tsp Black pepper powder , काली मिर्च का पाउडर
Water , पानी
½ tsp Sugar , चीनी
4-5 tbsp Corn-starch slurry , कॉर्न स्टार्च का लिजाम
2 tbsp Coriander stem, chopped धनिए के डंठल

For Fried Noodles

2 cup Noodles, boiled , नूडल्स
A pinch Salt , नमक
1 tbsp Corn-starch , कॉर्न स्टार्च

For Garnish

Spring onion , प्याज पत्ता


For Fried Noodles

In a bowl add boiled noodles, salt, corn-starch and mix it properly making sure that everything is coated.

Now deep fry in hot oil until golden brown. Remove and keep aside for further use.

For American Chop Suey

In a wok heat oil and add ginger, green chilli, garlic, saute it for half a minute.

Now add onion, carrot, cabbage, capsicum, red bell pepper, yellow bell pepper, baby corn and saute for a minute on high flames.

Then add soya sauce and let it caramelize on high heat.

Once done add tomato ketchup, red chilli sauce, black pepper powder, water, sugar, mix everything properly and bring it to a boil.

Then add the corn-starch slurry and coriander stems and mix everything properly, continue cooking for a minute and switch off the flames.

Serve hot on a plate by placing the fried noodles first and then pour the sauce on it and garnish with spring onion.

Egg noodles 1 packet
Prawns cleaned 1 cup
Boneless chicken 1 cup
Salt ½ tsp
White pepper ½ tsp
Soya sauce 1 tbsp
Corn flour 1 tsp
Carrot 1 (cut into juliennes)
Capsicum 1 (cut into juliennes)
Onion 1 (cut into juliennes)
Green onion leaves ½ cup
Cabbage 1 cup
Egg 1 (half fry for garnish)
Oil 2 tbsp
Ketchup 4 tbsp
Salt ½ tsp
Stock ½ cup
Crushed garlic 1 tbsp
Vinegar 2 tbsp
White pepper ½ tsp
Corn flour 1 tbsp (dissolved into 2 tbsp water)
Chilly garlic sauce 3 tbsp
Sugar 2 tbsp
Chinese salt ½ tsp


Marinate prawns and chicken with salt, white pepper ½ tsp each, soya sauce 1 tbsp and corn flour 1 tsp.

Boil noodles for 5 minutes, strain and deep dry in batches till crisp.

Heat oil sauté crushed garlic, add in marinated chicken and prawns with all above seasonings, also add in the vegetables, sauté for 2 minutes, add stock when boiling when thicken gravy with corn flour paste. Spread gravy over fried noodles in a platter.

Top with fried egg and serve.
