INGREDIENTS

1 tsp Oil
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds
2 tbsp Finely chopped Onion
1 cup Fine Rava / Sooji / Semolina
1/2 cup Yogurt
Salt to taste
3/4 cup Water
1 tsp Eno fruit salt
1 tsp Water
Oil

INSTRUCTIONS

Heat up oil in a tadka pan.

Add mustard seeds and let them pop up.

Add cumin seeds and let them splutter.

Add onion and mix well. Cook for just about a minute until these turn nice and soft.

Keep the tadka pan aside.

In a bowl take sooji. Use raw sooji. You don’t need to roast it.

If you want you can roast sooji a little.

Add yogurt and salt. Mix well.

Add water and mix well. Appe batter is already.

Add the fried onion and mix well.

Cover and rest it for at least 15 minutes.

After resting, add Eno fruit salt and water. Mix well.

Preheat the appam Patra and add a little oil in each mold. Spread the oil.

Add appam batter in each mold.

Fill each mold up to 3/4th of its capacity as appam will rise when these are cooked.

Cook for about 2-3 minutes and flip appam over.

Loosen the edges with the help of a knife and flip over.

Cook appam for about 3-4 minutes from the other side too.

Take appam out into a dish.

Appam is already.

Serve appam with chutney.

INGREDIENTS

2 cup rava / semolina / sooji
1.5 cup curd / yogurt
salt to taste
1 cup water
4 tsp oil
2 inch ginger (grated)
2 green chilli (finely chopped)
1 onion (finely chopped)
10 curry leaves (chopped)
4 tbsp coriander leaves (finely chopped)
pinch baking soda

INSTRUCTIONS

firstly, in a large mixing bowl combine 1 cup rava, ¾ cup curd and ½ tsp salt.

mix well to form a paste without forming any lumps.

further add ½ cup water or as required.

mix well to form thick batter. keep aside.

in a kadai heat 2 tsp oil and saute 1 inch ginger, 1 green chilli and ½ onion.

saute for a minute or till onions shrink slightly.

transfer the roasted onions into prepared rava batter.

also add 5 curry leaves, 2 tbsp coriander leaves and combine well.

rest for 20 minutes or untill rava absorbs water.

furthermore add a pinch baking soda just before preparing appe and combine well.

heat paniyaram pan / guliyappa pan / appe pan, add add few drops of oil inside the holes.

now fill the holes with a tbsp of sooji batter in each.

cover and simmer for a minute or untill appe gets cooked slightly.

once the base turns golden, flip it over to the other side using a spoon.

simmer further and cook on low heat until it turns golden browns.

finally, serve instant rava paniyaram with tomato chutney or coconut chutney.
